For the best tasting and most aromatic lemonade, start by making lemon-infused simple syrup. Boil water and sugar, add lemon zest and cool. As the mixture cools, the syrup will acquire a more pronounced lemony aroma and flavor. Stir freshly-squeezed lemon juice to the cooled syrup and add ice.
- 3 lemons
- ½ cup sugar
- 1 cup water
- lots of ice
- Boil the water and sugar to make the simple syrup. Cook just until the sugar dissolves, adding the lemon zest during the last minute.
- Cool the syrup.
- Add the juice from the lemons to the syrup. Start with the juice from two lemons, taste and add more until you get the sweet-tart balance that you like (see notes after the recipe).
- Half fill a pitcher with ice, pour in the lemon mixture, fill up with water, stir and enjoy your ice cold fresh lemonade.
Remember that you will be adding water and ice to complete the lemonade so if the flavors taste too strong before ice is added, that’s really how it ought to be.
