Iced Tea Mojito

You can prepare this drink in two ways — as a cocktail drink or as a non-alcoholic iced beverage. If course, the non-alcoholic version won’t be a anything similar to a mojito and you can call it anything you like. Like minted iced tea. It’s really very good. But if you feel a little naughty and you want to take that extra step to turn your iced tea into a mojito-like drink, go ahead and pour in a little (or more than a little) rum.

Ingredients
  

  • 1 generous pinch loose leaf tea I used jasmine green tea; substitute your preference
  • 2 tablespoons simple syrup
  • 1/2 lime or lemon cut in two
  • 8 mint leaves
  • 1 big splash rum

Instructions
 

  • Place the tea leaves in a cup. Pour in half a cup of hot water. Let steep for two minutes. Throw out the water.
  • Pour another half cup of hot water into the cup of tea. Leave to steep for at least five minutes (the longer the tea steeps, the stronger the flavor). Lightly ress and discard the tea leaves. Cool.
  • Place the lime or lemon and mint leaves in a glass and muddle. I started out with just 1/4 of a lemon but the drink tasted wrong and I added the juice from another 1/4 lemon so, in the ingredients list, I just placed “1/2 lemon”.
  • Drop about four ice cubes into the glass. Pour in the tea and the simple syrup. Stir. That’s a very, very good iced tea you have there already.
  • Stir again after pouring in the rum and the drink is ready.
